You could also substitute Angus.
2 T. Olive oil
1 # meat cut in cubes
1/4 tea. Salt
Pinch fresh pepper
1 med. Diced onion
2 minced garlic cloves
2 T. Tomato paste
2 celery stalks, diced
2 lrge. Carrots, sliced
2 lrge. Parsnips, sliced
One 15.5 ounce can chickpeas,drained
3/4 C. Red wine
3 C. Chicken broth
One 15 ounce tomato sauce
1 lrge. Orange-segemented,juice saved
1 tea. Grated orange zest
1 1/2 tea. Cumin
2 T. Chopped fresh mint
Heat oil, brown meat 5 min. add onion cook 3-5 min. Add garlic cook 1 min.
Now combine all above in crockpot, stir to blend. Turn pot on low, let cook 6-8 hrs. Serve with fresh mint. Enjoy!
